Always behind.......

Well today I made 10 coffee cakes. Gary and Cathy left a 10 pound bag of buckwheat pancake mix here. I have 2 new neighbors I need to take treats to. I looked for a recipe using pancake mix and found it!
 I decided while I was making them, to make some for our home and visiting teaching families. So we will be delivering them this afternoon. The cake part is not to sweet, and the topping is sweet and full of oats, it's perfect for breakfast. But it's a smidgen on the dry side, so you will need milk:-)


PANCAKE MIX COFFEE CAKE

CAKE:
2 C. Pancake Mix
1/2 C. Sugar
1/4 C. Milk
1/4 C Vegetable Oil
1 Egg
Blueberries (optional)
Mix these ingredients together and pour into a greased 9x13.


TOPPING:
3/4 C. Oats
1/3 C. Brown Sugar
1 tsp. Cinnamon
3 Tbsp. Butter
Mix these ingredients together and sprinkle over the top of the cake. Bake @ 350 degrees for 20-25 minutes.




 The girls are having a joint Tangled Birthday Party. Mike and I went on Monday to the Disney Store to buy them a Tangled Princess Dress and shoes for their party. We went back the next day to get our preordered DVD, the store was crowded and all of the Tangled things were sold out! I called Erin and told her how awesome her parents were because we bought it all the day before!
 We have had some nice warmer days, up in the 50's and such, then we have had some dark cloudy days. These were big dark clouds I thought they were so pretty!
 For a few years now the ladies in Utah have been getting "glitter toes." It's fun, sparkly and pretty. so I broke down this spring and got my toes done. It is a bit darker than I would have liked. But there were a zillion colors to choose from. I either wanted pink, turquoise, or purple. The girl pointed out that this one had all the colors I wanted in it. It is supposed to last for 6 weeks.
We have had a lot going on. I am behind a few trips and Nathan being terribly sick for 2 weeks. I am hoping to uddate my blog soon!

Tangled was so fun. And the cakes look delish. G and I are on a regimen lately that has me down about four pounds in four weeks. I feel better in my clothes now, but it means I can't eat that kind of stuff. And I really can't. I react to simple carbs pretty violently. Sad, huh?
