I tried to make my own power bars.......

There are ton's of "healthy" nutrition bars out there. They have some protein and a healthy dose of calories. They have ton's of different kinds. And they are so very confusing when trying to choose. I got the bright idea to make my own. There is a food storage store in the area and I stopped by and bought all kinds of seeds and nuts.   I started out with an old candy base of- peanut butter, honey, and powdered milk. Then I mixed in flax seed, sesame seeds, wheat germ, sunflower seeds, rolled oats, almond meal, coconut, walnuts, raisins... You get the picture. They all had good nutritional value. Except for the unsweetened coconut, I don't know if there was much nutrition in that.  And I recently found out that raisins have more potassium in them than bananas. I mixed it all together and pressed it into a 9X13 pan. It was a beautiful thing.

Then I sat down with the amounts of ingredients I used. One cup of oats, 2 cups peanut butter, etc... When I figured out the calories there were 9,000 in that 9x13 pan. So I have to have a tiny little 1 inch piece for like 150 calories! Yikes, I learned that the protein bar business is tough!

On a good note, the boys LOVE them. It really does taste super good. And they are really healthy.
I think it needs some tweaking. In the mean time at least my boys will gobble them up:-)

Okay - well, when you get this thing worked out - I want the recipe. Heck, I want a 9X13 pan full. GOOD GIRL!!! Keep at it. We, who do not cook, salute you!

~~~Best Brownie Protein Bars

½ cup oat flour ¼ cup whole-wheat flour
1-cup whey protein powder
½ cup stevia blend
1/3 cup cocoa
¼ teaspoon baking powder
¼ teaspoon salt
1-tablespoon liquid lecithin ½ cup fat free cream cheese (room temperature) 2 eggs
¼ cup fat free Miracle Whip
1 teaspoon super-strength chocolate flavoring (LorAnn)


Preheat oven to 325 degrees. Line a 9”x9” baking pan with wax paper.

In a bowl combine all dry ingredients. Set aside. In a large bowl, with an electric beater, combine lecithin, cream cheese, eggs, Miracle Whip, and flavoring until light and fluffy. Add the dry ingredients to the wet. Mix well. Pour batter into lined 9”x9” square pan and smooth evenly.

Bake for 15-20 minutes. Remove from pan and cool slightly. Remove wax paper and cool completely. Cut into 9 bars.

Per bar: Calories:99 Protein: 9g Carbs:9g Fats:3 g

Thanks for those, I will have to research these things "in the kitchen":-) Mike really likes the ones I made and he is sad they are to caloric. We were trying to figure out how to make them a little less calorie laden.

That's what I was curious about, too. But all the stuff I found seemed to have ingredients I'd never have thought of all in common. So it's a trip to the health store . . .
